The internet says Fall starts on the 23rd of September this year. I suppose that’s ok. I have been celebrating the season since the beginning of the month. I want to get the most value out of fall.
I have had trouble keeping up with blog posts this summer. I have been outside a lot so inside stuff has been put on the back burner. Since the wind is blowing 30 mph here in Cedar CIty, it’s a good day to be in the house. I also just got back from Mexico and my guts aren’t really happy right now! So, this is a good day to post.
We have been busy over the summer here at the Knucklehead Ranch. The dogs have been keeping the yard mostly critter free. There is a gopher or mole or something that has been digging up my immediate front yard.
Gemma got into the chicken coop and roughed up my new chickens. One died. Gemma got a timeout in the crate for a few hours. Iggy was involved but didn’t do any damage to my birds. Iggy is always involved!
The trim is up on the eaves of the garage. I will be working on the inside this winter. I’ll work on insulation and on getting the cabinets up on the wall. It will be nice to get my tools put away.
I am planning to get the driveway and fence put together so I can drive right up to the garage.
As always I have been doing crafty stuff. I made some cute Halloween Trick or Treat Bags from a pattern I found on Pinterest. Also put together some dog crate pads from old towels and pillows.
The Trick or Treat bags have been a hit with the ladies at work. I already have orders for six more!
Last week I made some Chocolate Chip Macaroons from this recipe.
Chocolate Chip Macaroons: Bake at 350* for 8-12 minutes.
2c shredded coconut (I used Bob’s Red Mill Unsweetened Coconut)
3 tbs flour
1/4 c plus 2 tbs mini chocolate chips (I used Alison’s Pantry-Ghiradelli mini chocolate chips)
1 tsp vanilla
1 can (14oz) sweetened condensed milk
Mix dry ingredients together, add sweetened condensed milk, vanilla, and choc. chips. Use parchment covered cookie sheet. I also sprayed my parchment with some oil for good measure. Use a cookie scoop to make rounded mounds. Let cool before removing cookies from pan. Yields 24 cookies
The macaroons were also popular at work. I try to take a treat with me to work at least once a week. Sorry, there isn’t a photo.
